This easy vanilla muffin recipe is my absolute favorite! It is super simple to make and only requires 15 minutes in the oven.
The preparation is just as quick; if you have all your ingredients ready, you can mix the batter in less than 10 minutes!
For me, this recipe holds so much more than just vanilla flavor—it’s a connection to my childhood. Back in Sri Lanka, when I was a preschooler, I used to buy cakes just like these at the smaller tea shops in the junctions. We called them “spunchy” (I’m sure it was short for “sponge”), and while they were slightly denser than a modern sponge cupcake, they had the exact same signature shape as these muffins. Bakeries back then used narrower, comparatively deeper single stainless steel molds, though now they often use sponge cake batter in standard cupcake trays. I’m convinced that cakes like this were introduced to Sri Lanka by the Portuguese, Dutch, or English, and this particular shape reminds me of the exquisite French cake, the Madeleine.
The results are always wonderfully fluffy and delightful. If you look closely at the finished muffin, you’ll notice a big, beautiful hump that has popped right out of the basin—my son calls this the “alien ship” shape! I hope you enjoy these playful, perfectly risen muffins as much as we do.

Baking Tips for Perfect Vanilla Muffin
To get the best results, ensure your ingredients are at room temperature. You can melt the butter in the microwave, just don’t let it get too hot—barely melted is perfect and let it cool in room temperature until other ingredients are combined.
The most important secret is to not over-mix the batter once the flour goes in; too much mixing makes the muffins tough and dense. For a little flair, sprinkle some granulated sugar on top before baking for a sweet, crunchy finish! These are super versatile, so feel free to stir in chocolate chips, sprinkles, or fresh berries to make them even more exciting.
I love that signature hump in this easy vanilla muffin ! Batter consistency definitely matters, but the real secret is stirring in the melted butter last.
