Ingredients
  

  • 1 cup Plain Flour
  • 2 tbsp Caster Sugar
  • 1 tbsp Raw Sugar
  • 1/4 tsp Salt
  • 1/2 tsp Baking Powder
  • 1 tbsp Thick Cream
  • 1/4 tsp Vanilla Extract
  • 4 tbsp Jam of your Choice

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the all-purpose flour, caster sugar, raw sugar, salt, and baking powder. Stir to combine.
  • Add the cold cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.
  • Stir in the egg yolk and vanilla extract (if using). Gradually add the milk, 1 tablespoon at a time, until the dough just comes together. Be careful not to overmix to keep the cookies tender.
  • Use your thumb or a muddler to create a small dent in the center of each cookie. Fill each dent with about 1/2 teaspoon of your favorite jam, being careful not to overfill.
  • Bake the cookies for 12-15 minutes, or until the edges are lightly golden. Allow them to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
