Ingredients

  • 200 g Plain flour
  • 1/4 tsp Salt
  • 50 g Cold solid butter
  • 2/3 cup Ice-cold Water

Apple Sauce Filling

  • 3 Apples Granny Smith
  • 3 Tbsp White sugar
  • 1 Tbsp Brown sugar
  • 1/2 Tbsp Cornflour
  • 2 Tbsp Water
  • 1/4 tsp Cinnamon powder

Vegetable oil for deep fry

Instructions

Making the dough

  • Add flour in a bowl with salt
  • Cut the butter into small cubes and add it to the flour.
  • Using your fingertips, rub the butter into the flour until the mixture looks like coarse crumbs.
  • Once the butter is fully worked in, gradually add a little ice-cold water at a time, mixing gently with your hands until the dough comes together.
  • Wrap the dough in a cling wrap and put in the refrigerator for 1/2 hr

Making Apple Sauce Filling

  • Peel the apples and cut them into small cubes.
  • Place the apple pieces into a saucepan, then add the white sugar and cinnamon powder. Mix well to coat the apples.
  • Cook over medium heat, stirring occasionally.
  • Add the brown sugar and continue cooking until the apples soften and release their juices.
  • In a small bowl, mix the cornflour with a little water to make a slurry, then stir it into the apple mixture.
  • Cook for another minute or two until the filling thickens.
  • Leave a side to cool down completely

Making apple pies

  • Take the dough out of the refrigerator and roll it flat, folding it a couple of times as you go.
  • Cut the dough into 8 long rectangular strips.
  • Lay one strip of dough on the table and spoon the apple filling into the centre section, leaving space at both ends. Since the strip is long enough to make two pies, keep the filling in the middle so it can be cut and sealed easily. Lightly brush the edges with water, then place another strip of dough on top. Press around the edges to seal, cut in half to form two pies, and use a fork to crimp the edges neatly.
  • Heat vegetable oil for 140 C and fry the pies until golden brown both sides
