Easy Air Fryer Roasted Carrots

Make easy air fryer roasted carrots in just 20 minutes! This healthy, simple side dish has perfectly caramelized edges with garlic & fresh parsley.

Ingredients
  

  • 1 Kg Carrots Medium
  • 1 tsp Garlic powder
  • 1 tsp Crushed black pepper
  • 2 tsp Chopped Parsly Fresh
  • 1 tsp salt
  • 2 Tbsp Olive oil Extra virgin

Instructions
 

  • Prep the Carrots: Peel the carrots. If you are using thin to medium-sized carrots, simply trim the ends. If you are using thicker carrots, cut them in half lengthwise (splitting them) to ensure the hard core cooks evenly. The goal is to make sure all pieces are roughly the same thickness.
  • Marinate: In a large bowl, combine the prepared carrots, EVOO, garlic powder, salt, pepper, and about half of your chopped parsley. Toss vigorously until every carrot piece is completely coated.
  • Preheat and Load: Preheat your air fryer to 356°F (180°C) using the Roast setting. Once hot, place the marinated carrots in the air fryer basket. Crucial Tip: Do not overcrowd! Arrange them in a single, or near-single, layer so the hot air can circulate for maximum crisping. Work in batches if necessary.
  • Air Fry: Cook for 20 minutes total.
  • Shake for Perfection: At the 10-minute mark, pause the air fryer and give the basket a really good shake to flip and redistribute the carrots. This ensures they cook and caramelize evenly on all sides.
  • Check and Serve: The carrots are done when they are fork-tender and have those beautiful, deeply caramelized, shrink-wrapped edges. Transfer them to a serving dish, sprinkle with the remaining fresh parsley, and serve immediately.

Pro Tip from the Chef!

Splitting the thicker carrots in half lengthwise is the secret weapon here! It creates more surface area for the olive oil and seasoning to stick to, and it guarantees that the hard, dense middle of the carrot gets perfectly tender right when the outside starts to caramelize. Trust me, it makes all the difference!
