Banana Chocolate Chip Muffins

These banana chocolate chip muffins are soft, fluffy, and packed with rich banana flavour and plenty of chocolate chips. An easy muffin recipe that you can make without a cake mixer — perfect for a quick snack, lunchbox treat, or satisfying your sweet tooth

Equipment

  • 1 6 Mould Muffin Tray
  • 1 Hand whisk
  • 1 Mixing bowl
  • 1 Silicon spatula
  • 1 Greasing brush
  • 1 Measuring Scale

Ingredients
  

  • 150 g All purpose flour
  • 150 g Melted butter Unsalted
  • 150 g Caster suga
  • 1 Large Banana Well-ripen
  • 1 tsp Vanilla extract
  • 2 Large Egg

Instructions
 

  • Preheat the oven to 165°C.
  • Peel the banana and mash it with a fork until smooth and mushy. Set aside.
  • In a mixing bowl, lightly whisk the egg. Add the caster sugar and whisk briskly for about a minute. Stir in the mashed banana and beat until well combined and fluffy.
  • Add the melted butter and mix through. Stir in the vanilla extract.
  • Gradually add the flour and baking powder, mixing gently until the batter is smooth and well combined.
  • Grease a muffin tin with a pastry brush (or line with muffin cases). Pour the batter evenly into 6 muffin moulds.
  • Bake for 20 minutes, or until a skewer inserted into the centre comes out clean.
  • If you’re not using muffin liners, allow the muffin tray to cool completely before removing the muffins
