Soft and Fluffy Banana Waffles for Breakfast

Measurements

I’ve included both Australian and US measurements for the ingredients. There might be some slight variations, but nothing significant enough to affect the recipe.

Ingredients

  • 1 cup all purpose flour
  • 1 cup butter milk
  • 1/3 cup vegetable oil
  • 1 Tbsp brown sugar
  • 1 Tbsp polenta
  • 1/4 tsp flaked salt
  • 1/4 tsp baking soda (heaped)
  • 1 tsp vanilla extract
  • 1 well-ripen banana
  • 1 large egg
  • 1/4 tsp cinnamon powder
  • 1/2 cup water

Instructions

  • In a bowl, whisk together the dry ingredients: flour, baking soda, salt, brown sugar, cinnamon powder, and polenta. Set aside.
  • Peel the banana and mash it with a fork until smooth and mushy.
  • Lightly whisk the egg, then add it to the mashed banana. Stir in the rest of the wet ingredients — buttermilk, vegetable oil, and vanilla extract (leave out the water for now). Mix until well combined.
  • Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix.
  • Finally, add the water and mix lightly until incorporated.
  • Pour the batter into a preheated waffle maker and cook according to the manufacturer’s instructions.
  • Serve warm topped with sliced banana and your favourite syrup. Mine is maple syrup
