Simple and Easy Healthy Egg and Peas Quinoa Stir Fry
This egg and peas quinoa stir fry is one of my favorite go-to recipes, especially when I’m short on time but still want something healthy and satisfying. Quinoa cooks quickly—much faster than rice or other grains—which makes this dish ideal for busy weekdays. In less than 30 minutes, you can prepare a wholesome, balanced meal that’s perfect for the whole family. It’s not only convenient but also incredibly nourishing. I often enjoy it as a main dish for lunch—it’s filling, energizing, and leaves me feeling great for the rest of the day.
Packed with protein, fiber, and essential vitamins, this stir fry combines fluffy quinoa, soft scrambled eggs, and tender green peas to create a dish that’s both flavorful and nutritious. The mild sweetness of peas pairs beautifully with the richness of eggs, while the quinoa brings a subtle nuttiness to each bite. Ingredients
- 1.5 cups white Quinoa
- 1 cup green peas
- 2 eggs (add 3 if you like)
- 1 tsp onion powder
- 1 tsp cajun powder
- 1 tsp hot cracked chilli
- 1 tsp Italian herb mix
- 1 tbsp butter
- 1. 5 tbsp olive oil
- salt to taste
Instructions:
Wash and Cook Quinoa:
Rinse the quinoa thoroughly under running water to remove its natural bitterness. Add the washed quinoa to a saucepan along with a pinch of salt and a drizzle of olive oil. Pour in enough water to cover the quinoa (typically about 2 parts water to 1 part quinoa). Bring it to a boil, then reduce the heat and let it simmer until the quinoa is soft and tender, usually about 10-15 minutes. Avoid overcooking, as it can become mushy and affect the texture of the final stir fry.
Once the quinoa is cooked leave out of the store for 5 minutes to cool
Make the stir fry
Place a shallow pan over medium heat. Crack the eggs directly into the pan, then add a pinch of salt and some crushed chili (or chili flakes). Gently stir the eggs as they cook to scramble them evenly.
Once the eggs are mostly cooked, add the green peas to the pan. Sprinkle in your spices and herbs—such as Cajun seasoning, onion powder, and Italian herb mix. Add a small knob of butter and continue to cook, stirring gently, until everything is well combined and the peas are tender. Keep the heat at medium to avoid burning the spices while allowing the flavours to meld together.
