- The Veggie Base: Finely diced carrots and celery (great for texture and nutrition).
- Aromatics: Chopped onion and a little garlic finely chopped.
- The Sauce: A good quality tomato passata or canned crushed tomatoes. I am using cans of crushed tomatoes here.
- Seasoning: Salt and freshly cracked black pepper to taste. I like to add a pinch of crushed chili—it’s optional, but it gives the sauce a lovely little kick that my “clan” really enjoys. Finish it off with a heap of fresh basil leaves or a generous sprinkle of mixed Italian herbs for that classic aroma.
- Pasta: Your favourite spaghetti, cooked al dente.

- Brown the Beef: Add the minced beef to the pan. Along with green chilli, chopped garlic and crushed black pepper. Break it up with your spatula and cook until it’s browned all over.
- Simmer: Then add chopped basil leaves, carrots, and celery. Cook them until they are soft and fragrant. Pour in your tomato sauce, I am using cans of crushed tomatoes so I wash the cans after emptied and pour that water in the pan. Let it simmer on medium heat for about 10–15 minutes. This allows the flavours to marry together without needing hours on the stove.
- Combine: Toss your cooked spaghetti directly into the pan. Mix it well so the pasta soaks up that delicious, savoury sauce.

Success Tips for Busy Mums
- The “Pasta Water” Trick: If the sauce looks a little thick, add 1/4 cup of the water you boiled the pasta in. It makes the sauce silky and helps it stick to the noodles.
- Batch Cook: I often double this recipe and freeze half. It’s a lifesaver for those nights when I’m too exhausted to even think about cooking.

Ingredients
- 500 g Spagetti boiled al dante
- 1 cup Carrot (diced)
- 1/2 cup Celery (sliced)
- 2 cans Crushed tomatoes
- 500 g Lean mince beaf
- 1 Large brown onion (diced)
- 1 tsp crushed chilli (optional)
- 1 tsp cracked black pepper
- 20 g chopped basil
- salt to taste
- 1 tsp garlic chopped
- 1 tsp green chilli chopped
- 2 Tbs Olive oil
Instructions
- Sauté the Base: Heat the olive oil in a large wok or deep skillet. Add the diced brown onion and sauté until soft and translucent.
- Add the Meat: Add the beef mince to the pan. Use your wooden spoon to break it up.
- Add the Aromatics: Stir in the chopped garlic, salt, crushed pepper, and green chili. Sauté for a minute until the garlic is fragrant.
- Incorporate Herbs & Veg: Add the chopped basil, diced carrots, and celery. Stir well and cook for about 4 minutes to let the vegetables soften.
- Simmer the Sauce: Pour in the 2 cans of crushed tomatoes. Fill the empty tins with a splash of water, swirl to get the remaining sauce out, and add that to the pan as well. Let the sauce simmer for another 4 minutes.
- Toss the Pasta: Add your pre-boiled spaghetti directly into the sauce. Toss thoroughly with tongs until every strand of pasta is perfectly coated and heated through.
