Chicken, Potato and Spinach, Healthy One – Pot Meal Recipe

Chicken, Potato & Spinach One-Pot Meal — Perfectly Paired with Brown Basmati Rice

Serve 4

Ingredients

  • 400g Chicken breast cut in to cubes
  • 3 medium size potatoes (peeled and cut into cubes)
  • 200g spinach washed and drain water
  • 1/2 Cup Greek yogurt
  • 1/4 tsp garam masala
  • 2 tsp Sri Lankan curry powder (mild)
  • 1/4 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp ground ginger
  • 1 tsp ground garlic
  • 1/2 onion diced
  • 1 tsp green chilli chopped
  • 1/2 tsp raw sugar
  • 1/2 cup water
  • Salt to taste
  • 2 Tbs vegetable oil

Instructions:

  • Add chicken pieces in a bowl and marinate with, yogurt, garam masala, curry powder, turmeric powder, chilli powder and salt
  • Next in a cooking pot, add the diced onion, green chilli and oil, let oil heat up slowly while onion and green chilli starting to sautéed.
  • When the onion and green chilli are starting to sautéed , add garlic and ginger into it. Sautéed for a minute, do not over fry the ginger and garlic.
  • Next add the marinated chicken in the pot, mix it well and add water with it. Reduce heat and cook the chicken in low heat for about 45 minutes covered.
  • After 45 minutes add the potato pieces stir gently and then cook potatoes until they are soft. leave the lid open after adding potatoes.
  • When potatoes are cooked and liquid is slightly simmered turn off the heat and add the spinach mix gently
  • Serve warm with brown basmati rice
