Chicken Asparagus and Carrot Healthy One-Pot Meal Recipe

Here is another simple and easy one-pot curry idea for busy people who love to eat healthy, It took me only 30 minutes to make this chicken asparagus and carrot healthy one-pot meal and we all loved it.

Why I love making chicken asparagus and carrot healthy one-pot meal

I know exactly how it feels to have a picky eater at home — my teenager has always been super selective, especially when it comes to veggies. Getting them to eat anything green feels like a small victory every time. That’s why this one-pot chicken asparagus and carrot curry became a game changer for us.

By cooking everything together in one pot, the flavors blend so well that the veggies almost sneak in without being noticed. One nutritionist even tasted it and loved it — which gave me the confidence to strike a little deal with my teen: just two pieces of green veggies, no questions asked.

Chicken Asparagus and Carrot Healthy One-Pot Meal Recipe

Serve 4

Ingredients

  • 400g Chicken breast cut in to cubes
  • One bunch of asparagus
  • 3 medium size carrots (peeled and cut diagonally)
  • 1 cup of almond milk
  • 2 tsp Sri Lankan curry powder (mild)
  • 1/4 tsp turmeric powder
  • 1/2 tsp chilli powder (optional)
  • 1/2 onion diced
  • 1 tsp green chilli chopped
  • Salt to taste
  • 2 Tbs vegetable oil
  • 3 pods of cloves
  • 1 tsp white wine vinegar
  • 1 tsp chopped garlic

Instructions:

  • Add chicken pieces in a bowl and marinate with curry powder, turmeric powder, chilli powder, pods of cloves, salt and vingegar
  • Next in a cooking pot, add the diced onion, garlic, green chilli and oil, let oil heat up slowly while onion and green chilli starting to sautéed.
  • When the onion and green chilli are starting to sautéed, add marinated chicken and carrots mix well and cover the pot. Cook this in medium heat for about 15 minutes
  • When chicken breasts are cook in medium heat, it release water and that is enough to cook the chicken and carrots.
  • Next add the almond milk and mix well and cook in high heat for about 10 minutes to reduce the liquid.
  • In last 5 minutes, add the diagonally cut asparagus and mix well,
  • Serve warm with brown basmati rice

If you’re not in the mood for rice, this chicken asparagus and carrot curry goes beautifully with dinner rolls too. Just serve a couple of rolls alongside the curry for a fresh, new way to enjoy your meal.
